This snack serves 1 and is good for a weekday breakfast – with the protein from the eggs you won't be hungry until at least 10 a.m. It takes 3 minutes to prepare if you already have boiled eggs on hand.
- 2 slices of thick toasting loaf (aka white death – a term coined by my sister)
- 2 hard boiled eggs, peeled
- 2 tsps good-quality mayonnaise
- a dash of tamari or soy sauce
- a dash of balsamic vinegar
- 1/4 tsp French mustard
- 1/4 tsp paprika
- a sprinkle of brown sugar
- salt to taste, if you need it
- a few sprigs of finely chopped flat-leaf parsley
How it's done
- Mix it: Mash hard boiled eggs with mayonnaise in a bowl. Stir in the remaining ingredients, minus the parsley, then mash a little more. Stir in the parsley.
- Serve it: Toast the bread, then heap the egg mixture on top of it. Serve with a strong cup of Darjeeling tea, in that favourite mug you secreted when last at your Dad’s house.
