make this with a good quality soy milk and even kids won't tell the difference
Serves 1, or double it for a cosy breakfast for two. It takes about 10 minutes to prepare.
Ingredients
- a sprinkling of flaked almonds, dry fried in a pan until golden brown
- 2 handfuls of organic oats (not quick oats)
- 3/4 of a cup of soy milk (I like Bonsoy, though use milk if you don't like soy)
- a small handful of raisins or currents
- 4 prunes
- 1 sliced banana
- a dash of vanilla essence
- some brown sugar and a 1/4 cup of soy milk to serve
How it's done
- Prepare the porridge: Place oats and 3/4 cup of soy milk in a small pot on high heat. Add the sliced banana, vanilla essence, prunes and raisins. When the mixture begins to boil, turn the heat to very low. Stir every so often. Add a little more soy if it's getting too thick.
- Serve it up: Pour the porridge into a pretty bowl. Top with a teaspoon of brown sugar and some toasted, flaked almonds. Pour soy around the porridge, making a kind of moat.
