a quick dish to prepare; raw onion gives it a zing & parsley freshens it

This salad serves 6–8. It takes about 10 minutes to prepare.

  • a 450 g bag of precut coleslaw (alternatively finely slice a half a small white cabbage and a half a small red cabbage, and grate a large carrot into the mix)
  • a quarter of a red onion, finely chopped
  • a handful of flat-leaf parsley, finely chopped
  • 3 heaped tbsp of good quality mayonnaise
  • a quarter cup of boiling water

How it's done

  1. Prepare the salad: Empty the precut coleslaw into a large mixing bowl. Add chopped red onion and chopped parsley. Add mayonnaise and boiling water. Stir through.
  2. Serve it up: Place it on a pretty, large plate with a pair of tongs nearby. Let guests help themselves.

Also teams well with

  • Boiled potatoes – chop two boiled potatoes into small pieces, then add a large serving of coleslaw on top. Top this with avocado dip and grated cheese, and serve with two hard-boiled eggs.
