  • olive oil for frying
  • 125g cooked pasta (any kind)
  • sea salt to taste
  • 2 eggs, beaten
  • a handful of chopped chives
  • a slurp of soy sauce at the end

How it's done

  1. Fry the noodles: Heat a small amount of oil with a sprinkle of sea salt in a small fry pan. Add the cooked pasta when the oil is hot. Turn the pasta over when it starts to crisp.
  2. Beat the eggs: Lightly beat two eggs in a bowl and add chopped chives.
  3. Put it together: When the pasta is a little more crunchy than not, pour the beaten egg & chive mix over the top. Swish around the pan with an egg lifter until the egg is set.
  4. Serve it: Pour a little soy sauce over the top and serve.
