Ingredients
- olive oil for frying
- 125g cooked pasta (any kind)
- sea salt to taste
- 2 eggs, beaten
- a handful of chopped chives
- a slurp of soy sauce at the end
How it's done
- Fry the noodles: Heat a small amount of oil with a sprinkle of sea salt in a small fry pan. Add the cooked pasta when the oil is hot. Turn the pasta over when it starts to crisp.
- Beat the eggs: Lightly beat two eggs in a bowl and add chopped chives.
- Put it together: When the pasta is a little more crunchy than not, pour the beaten egg & chive mix over the top. Swish around the pan with an egg lifter until the egg is set.
- Serve it: Pour a little soy sauce over the top and serve.
