I love making soup with no oil – just water, vegetables and stock. Then, as a centre piece, it's great to fry up something tasty like croutons, asparagus tips, mushrooms or tofu (with garlic of course) to top off the soup and add some interest. You'll feel you've eaten well and feel virtuous at the same time!
